Homemade Meatloaf
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, eggs, milk, ¼ cup ketchup, Worcestershire sauce, salt, pepper, thyme, oregano, and parsley. Use your hands or a spatula to mix everything together until well combined. Be careful not to overmix, as it can make the meatloaf tough.
- Once the mixture is combined, transfer it to the prepared loaf pan. Shape it into a loaf shape, making sure it’s evenly distributed in the pan.
- In a small bowl, mix together the ingredients for the glaze: ¼ cup ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
- Place the meatloaf in the preheated oven and bake for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer.
- Once cooked through, remove the meatloaf from the oven and let it rest for a few minutes before slicing. This allows the juices to redistribute and makes for easier slicing.
- Slice the meatloaf and serve hot with your favorite sides, such as mashed potatoes, roasted vegetables, or a green salad.
