Homemade Meatloaf

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, eggs, milk, ¼ cup ketchup, Worcestershire sauce, salt, pepper, thyme, oregano, and parsley. Use your hands or a spatula to mix everything together until well combined. Be careful not to overmix, as it can make the meatloaf tough.
  3. Once the mixture is combined, transfer it to the prepared loaf pan. Shape it into a loaf shape, making sure it’s evenly distributed in the pan.
  4. In a small bowl, mix together the ingredients for the glaze: ¼ cup ketchup, brown sugar, and mustard. Spread the glaze evenly over the top of the meatloaf.
  5. Place the meatloaf in the preheated oven and bake for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer.
  6. Once cooked through, remove the meatloaf from the oven and let it rest for a few minutes before slicing. This allows the juices to redistribute and makes for easier slicing.
  7. Slice the meatloaf and serve hot with your favorite sides, such as mashed potatoes, roasted vegetables, or a green salad.
