No Bake Chocolate Oat Bars

Layers of oats and chocolate, topped off with a drizzle of even more chocolate, make up this yummy treat. The best part? NO BAKING involved! These bars are perfect for summer and great all year long, offering the delicious feel of a baked chocolate and oat treat without the oven.

No Bake Chocolate Oat Bars Recipe

Ingredients:

  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick cooking oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter

How to Make No Bake Chocolate Oat Bars:

  1. Grease a 9×9 inch square pan.
  2. In a large saucepan, melt the butter over medium heat. Stir in the brown sugar and vanilla extract. Mix in the oats and cook over low heat for 2 to 3 minutes, or until the ingredients are well blended.
  3. Press half of the oat mixture into the bottom of the prepared pan. Reserve the other half for the topping.
  1. Meanwhile, melt the chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan and spread evenly with a knife or the back of a spoon.
  2. Crumble the remaining oat mixture over the chocolate layer, pressing it in gently.
  3. Cover and refrigerate for 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

I baked about 100 dozen cookies for the holidays, and these were everyone’s favorite sweet treat 😋! These bars can be frozen; just thaw for 10 minutes before serving.
