Greek Chicken Gyros Recipe
- Marinate the chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Coat the chicken thighs evenly with the marinade. Cover and refrigerate for at least 1 hour, ideally overnight.
- Prepare the tzatziki sauce: In another bowl, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Cover and chill to allow the flavors to meld.
- Cook the chicken: Heat a skillet or grill over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, until fully cooked and slightly browned. Let the chicken rest for a few minutes before thinly slicing it.
- Assemble the gyros: Warm the pita breads in a dry skillet or on a grill. Place cooked chicken pieces on each pita bread, then add sliced tomato, red onion, and lettuce.
- Add tzatziki sauce: Spread a generous amount of tzatziki sauce over the chicken and vegetables on each gyro.
- Serve: Roll up or fold the pitas over the filling. Serve immediately while warm.
