Ingredients
2 pounds hot breakfast sausage
1 bag (30-32 oz) frozen tater tots
1½ cups shredded cheddar cheese
½ cup shredded mozzarella cheese
8 large eggs
2 cups milk
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
Instructions
Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with cooking spray.
In a large skillet, cook the sausage over medium heat until browned and crumbled. Drain excess grease and set aside.
In a large mixing bowl, combine the cooked sausage, frozen tater tots, cheddar cheese, and mozzarella cheese. Toss gently until evenly distributed, then transfer the mixture to the prepared baking dish, spreading evenly.
In another bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until thoroughly combined. Pour this mixture evenly over the sausage and tater tot layer in the baking dish.
Bake in the preheated oven for about 1 hour, or until the casserole is golden brown and fully set. Allow it to rest for a few minutes before serving.
