Make the Lemon Filling (10 minutes)
- Mix Ingredients: In a large bowl, whisk together the egg yolks and sweetened condensed milk until smooth and well combined.
- Add Lemon Juice: Stir in the fresh lemon juice and whisk until the mixture is fully incorporated and slightly thickened.
Bake and Chill (30 minutes + 1 hour)
- Pour and Bake: Pour the lemon filling over the cooled crust, spreading it evenly to the edges. Bake for 15 minutes, or until the filling is set. The edges should be slightly golden brown, and the center should be just barely set, as it will continue to firm up while cooling.
- Cool: Remove the pan from the oven and allow the lemon squares to cool completely on a wire rack at room temperature.
