My nana calls these her “Lazy” bars as they are what she makes when she wants something tasty but doesn’t want to do a whole lotta work!

  1. Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal. Preheat the oven to 350°F (175°C).
  2. Prepare the crust: In a medium bowl, combine flour, brown sugar, and salt. Using a pastry cutter or your fingertips, blend in the cold butter until the mixture resembles coarse crumbs. Press firmly into the bottom of the prepared pan to form the crust.
  3. Bake the crust for about 15 minutes or until the edges are lightly browned. While the crust bakes, prepare the filling.
  4. In a large bowl, melt the butter and whisk in the corn syrup, granulated sugar, eggs, and vanilla extract until smooth. Stir in the chopped pecans.
  5. Spread the pecan filling evenly over the baked crust.
  6. Bake for an additional 20-25 minutes, or until the filling is set. Remove from the oven and allow to cool completely in the pan on a wire rack.
  7. Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve.

Tips and Variations:

  • For a twist, mix in chopped walnuts with half of the pecans or add chocolate chips for a nutty flavor.
  • For added warmth, sprinkle cinnamon or nutmeg into the filling for a festive touch.
  • Store bars at room temperature for a few days in an airtight container, or refrigerate for a firmer texture.

These Lazy Pecan Pie Bars are guaranteed to impress without the hours of effort. Treat yourself and your loved ones to a taste of Southern comfort that’s quick and easy to whip up. Enjoy the delight and simplicity!
