Hands down, the best meatloaf muffins ever!

  1. Preheat your oven to 375°F (190°C). Coat a 12-cup muffin pan with cooking spray or oil.
  2. In a large mixing bowl, combine the ground beef, beaten egg, breadcrumbs, ketchup, milk, chopped onion, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until all ingredients are well combined, being careful not to overwork the meat.
  3. Evenly distribute the meat mixture into the muffin cups, pressing lightly to form. Spoon a little ketchup on top of each meatloaf muffin.
  4. Place the meatloaf muffins in the preheated oven. Bake for 20 to 25 minutes, or until the muffins are cooked through and the center is no longer pink. An internal thermometer inserted into the center of a muffin should read 160°F (71°C).
  5. Remove the muffin pan from the oven and let it cool for five minutes before removing the muffins.
  6. Serve warm with extra ketchup or barbecue sauce, if desired.
