Eggnog Eclair Cake
Ingredients:
2 packages (3.4 oz) instant vanilla pudding mix
1.5 cups of eggnog
1.5 cups of whole milk
1/4 teaspoon of ground cinnamon
8 ounces plus 2 cups of thawed frozen whipped topping
14 ounces of graham cracker squares
Grated nutmeg or chopped nuts of choice for garnish
Instructions:
1. Mix pudding mix, milk, eggnog, and cinnamon in a bowl until smooth; fold in 8 ounces of whipped topping.
2. Layer graham crackers in a 9×13 casserole dish.
3. Spread half the pudding over crackers, add another cracker layer, then remaining pudding, and a final cracker layer.
4. Top with 2 cups whipped topping; chill for at least 4 hours.
